Country sourdough
Our everyday loaf. 48-hour ferment, crackly crust, open crumb. Sliced free if you ask.
A small bakery on SE Division. We mix the dough on Monday, let it take its time, and pull the first loaves at seven. Butter, flour, salt, and not much else.
Monday is for mixing, maintenance and a walk. Tuesday morning the shelves are full again.
Holiday weeks get posted on the door and on the shop voicemail — we close the day before Thanksgiving and the week between Christmas and New Year.
Everything is baked the day you buy it. If you want a particular loaf, the earlier the better.
Between 14th and 15th, on the north side of Division. Look for the green awning and the queue that looks longer than it is — it moves quickly.
Special order, wholesale, or a question about the bake. We read everything.
